Omelette with tomatoes, herbs and cheese
Making an omelette is one of the first things anyone learns to cook. A perfect and wholesome breakfast, heart healthy omelettes can be cooked in a variety of ways. For this one the ingredients are:
3 egg whites and one whole egg
Diced tomatoes, one or two if large, a handful if you are using cherry tomatoes
Fresh basil and coriander, you can even add fresh spinach and other vegetables if you so desire
Half a diced onion
A clove of garlic
A little more than half a cup of skimmed milk
First take the garlic and mince it up, add a tablespoon of olive oil to it in a pan and sweat under medium heat. Go on to add the onions and cook them until they are nice and translucent, add to this mix the diced tomato and basil. If you are using vegetables it would be a good idea to add them to this mix along with the appropriate amount of olive oil;if you are using additional veggies then it would be a good idea to add more onion. Take the eggs, skimmed milk and pepper in a bowl and go on to scramble it thoroughly. Spread it out on a pan greased with olive oil and go on to cook like any other omelette. Cover it with grated cheese of your choice, parmesan and cheddar are the healthier options, and when it has melted enough, add the onion,garlic, tomato and herb mix. Garnish with fresh coriander and basil and your heart healthy omelette is ready.
Eight slices of whole wheat bread
Non sticky olive oil
Two heirloom tomatoes, thinly sliced
Four ounces of mozzarella cheese cut in four slices
Half a cup of basil leaves
Balsamic vinegar for additional acidity (if required)
Coat four slices of bread with olive oil and cover it with cheese, tomato slices and basil and the remaining four slices on top. Grill them, or heat them on a pan on medium heat using olive oil. Your indication to stop would be the cheese beginning to run down the side and the bread turning a beautiful golden yellow. You can top it off with fresh coriander and in fact work around the stuffing for the sandwich to make it according to your tastes.
